There is a lot of good information about Stride and GameStudio and C# code examples. I recommend watching them all. They are great for beginners and useful even if you have experience in other game engines already.

I agree that more videos would be great! I wish I had the time currently to make my own “Let’s Make a Game in Stride” series, but I’m a bit busy just working on my game currently. I probably won’t get around to it for quite a long time. In the meantime be sure to check out the Discord Server. It’s a good place to learn and ask questions.
